Spiced Halibut by THW

4 Halibut steaks
Fresh Dill
1tbsp Paprika
2 tbsp Lemon zest
2tbsp Flour
1tsp Oregano
1tsp Thyme

Cook time: 10 minutes

Finely chop dill using herb chopper or knife

Mix paprika, zest, flour oregano and thyme in a bowl, add finely chopped dill,

Pat halibut steaks dry with a kitchen towel.

Press steaks into seasoned flour, spoon flour on to steak then turn over and cover steaks completely in seasoned flour. Shake off any excess. Set aside

Heat oil in skillet, add halibut steaks to skillet and fry until a thin golden crust has formed approx 4 to 5 minutes.

Turn halibut, reduce heat to medium, cook for another 3 to 4 minutes, until the flesh becomes opaque, add a knob of butter to the pan, tilt pan and baste as butter melts.
